Was your Exchange/outlook ever patched for DST?
The location of servers shouldn't matter, the appt should always display correctly for current the TZ of the client (e.g. if the desktop was set to GMT, the appt should show at the GMT time, not the EST).
Sounds like you need to patch for DST if you never did it in 2007. IIRC you can just patch a single outlook client if it's only affecting you. Search BBF and MS for this and you will find TONS of fun
