My experience with a few Today themes was that only two items showed. I'm not sure if it's possible to show more.

No you can't. "Today Plus" theme also only shows 2.

Also, "All Day Events" don't show at all.

Maybe someone who creates custom themes could change this but I haven't seen it done yet.
