Default How do u know if you're using wifi or carrier for internet?

I see the wifi symbol on the screen and it's 'lit' as well as the wireless name at the top so does the wifi override the service from nextel as long as there's a wifi connection?

That's my understanding. Wifi is the default when available.

When in the browser, press U to toggle the top bar.
It will tell you in that bar what you are using.

Thanks Genius! Now where is the diagram that shows what path to take to get to all the menus on this phone? Such a waste of time figuring which key to press and in which menu.

Assuming your profile is correct indicating you are using a 8350i, the user manual(google is your friend) might prove helpful.
