As follows:

Click on Messages Icon on display
Click trackwheel and scroll to Options
Open Options and click on Email Settings
On Send Email to Handheld, click trackwheel and choose Folder Redirection
Click on Mailbox option and Expand
Scroll to Sent Items and click trackwheel
Choose Change Option to remove the checkmark -- this will stop Sent Items from Outlook from appearing on your Blackberry.
