I have searched for a answers but seem to be getting conflicting responses. I want to have a customized today screen with options for Message, Calendar, Tasks and applications. Is this something I can create with Plazmic or am I stuck with the four traditional options Messages, Calendar, Phone and apps?

You can create that with Plazmic but only Messages and Calendar will show items, Tasks will not. You can still click on it to get to your tasks, but they will not show the same as the Messages and Calendar entries do.
