I've had that happen. It was maddening.
What most people don't realize about spam is that it's mostly automated, sent from
compromised (zombie) pc's that are part of a
botnet. The botnet master commands all the zombie machines to use them to send spam. Email addresses are gathered by bots scouring the web (which is why it's never a good idea to post your email address *anywhere* on the web. The lists are bought and sold by spammers/botnet operators.
I just read this article about how spammers make money, using the
"storm worm" botnet.

The reason there is so much spam is that it makes money -- bottom line. According to that study, one in ten people clicked through the links in the spam to buy "enhancers". If no one clicked the links, spam would stop because the spammers would no longer be profitable.
Spam is also used to spread viruses/trojans/malware. The big thing now is trojans that want to steal your passwords.
