This has drove me crazy and I can not figure out what the user has done to get this to happen.

When you compose a email in the To: and the CC: field it has << Marys Birthday >> so for example looks like this

To:
<< Marys Birthday >>

CC:
<< Marys Birthday >>


You can not type in the to field or the cc field but you can remove one or the other.

I wiped the OS off the phone and reloaded, I had the user dropped and re-added to the BES.

Still having the issue!

When you highlight the "Mary's Birthday" can you click and choose show address?

its something from the calendar, odd I know.. so I removed it from the calendar and still not working

I know it is a calendar event but was thinking it was somehow associated with an email address - I had a user who always showed as sending from a strange phrase (but it showed his email address when I clciked show address) and his email address had been associated with it - very weird
