I have 3 emails set up on my BIS page for Verizon. In the reply field, all 3 emails use their own address for replies. On a specific email I received, on email address #1, I'd like to respond using email address #2, without going into the BIS page and changing the option.

I've tried clicking the menu button when I reply to the email and then go to "change option" over the email address, but it won't let me change where I'm sending it from. Any way around this without logging into the BIS page every time?

From the BB, all "reply" emails are sent from the address to which it was sent. You cannot change that.

If you want to reply from a different address, you must FORWARD, then at the top of the email, change the default "send using" address.

When RESPONDING to a message, BIS 2.1 also does not allow you to choose a "reply to" email address from the BB that is different from the email address that you received the message from. You can reply from any of the email addresses you have set up with only that email address. For a NEW message, under BIS 2.1, you can pick any address you have set up. Crossriver Systems has provided a utility they are calling Reply As New. This utility adds a new menu option when viewing email in the native BB mail program. The utility takes the current email message, and crafts a "Reply Looking email" using the standard compose screen where you can select any of your email accounts to use to send the mail. Both the "From" and "Reply To" fields will be the email account you choose.
