Why would a message sent from my BB in the US route through and show an originating IP of a EU Blackberry server?

Without going into massive detail, all IP data has a start and end and the various addresses are in the header and link data. Without knowing where to reply to and where to send to nothing would flow.
Both ends are known.

Well...actually if you do a reverse search it comes back to a server in the UK, in London if I'm not mistaken.

I'm well aware of the methods to find and trace the origination and destination of data packets.

So how is it someone can send a message while in the US and it shows an origination IP for a RIM server in the UK?

It is possible Blackberry uses multiple servers to handle the data flow of a blackberry.
All Pre OS10 phones send all data to a RIM server then to the receiver for security. the carriers do not flow phone to phone with those phones as is done with other type phones.
I would think that Blackberry just utilized a free server to complete the data flow.

Data from your phone is more secure than others.
