I have a user that would like to be able to get Wireless Sync of Calendar but does not want to see all emails on his device.

What would be the best way? Can he simply disable mail forwarding?

Open up the BES manager, highlight the user and goto user properties.

Under redirection, you can change the message forwarding options to false. for cradle redirection and wireless redirection (This is for BES 4.0 GW, I assume it's similar to Exchange and 3.6 versions)
