hello,

if I delete a contact or multiple contacts or even all contacts on my blackberry which is connected to BES, does this reflect the changes on the Echange Server.

I am afraid of doing changes on the BB as I do not know if the changes done on the BB will always update the data in Exchange or it is a read only and cannot delete nothing.

The default setting is to sync contacts bi-directional but you can disable it using Desktop Manager.
