It is evaluated on a case-by-case basis. Most games I wouldn't trust for a minute, but then I don't waste my time on that drivel. An application must be from a respected software publisher -- respected is a judgment call as well based on perceived status and reputation within the community -- which can often be determined in these forums.
I agree with the above. Depends on the app. There is no one size fits all recommendation.
I look at what I need the app to do. Do I want to initiate calls from the app, share with a contact, save to my contacts ... An app being able to do these things in and of itself is not bad, but it might be suspicious for some particular app to do one or all of these things.
And then there's what you know or don't know, trust or don't trust, about the developer or distributor.

I have the same question than Chris K, and would like actually to learn more about the granted permissions that we can change for the 3rd party apps... is there somewhere i can read more about which are the safest permissions that we can give to the apps? or maybe someone here knows?...
Open either options > advanced options > applications, or options > applications, depending on your OS version. Pick a third-party app. Open the menu and select dedit permissions. Then open menu and select help. The help app should open to the permissions section. That is pretty good and may answer you questions.
