My blackberry has the 2 buttons on the top right side, and the 1 button on the bottom right side (plus button on left side).

Now - I know the button on the bottom right is set for the camera. The 2 buttons on the upper right don't do anything unless I'm in a music player and then they adjust volume. I want to see if I can program the buttons to control volume from any screen? Example: turn my phone on, then just simply push up/down to adjust sound.

No, it doesn't work that way. It will work that way with media (music, videos) or it will adjust the volume when you're on a phone call. But to adjust the volume of your notifications/ring tones you will need to do that with your profiles.
