Ok sorry for this but what are the differences between these 3 themes. I have done a search and can not seem to find anything (just switch to the 8300 2 days ago)

Icon - Your main menu just shows the icons you choose to show.

Today - Lists Messages, Calendar and Phone/Call Log on the main menu.

Zen - Lists five icons either at the bottom or the left hand side.

Zen gives you the best view of your background picture. If you have a wallpaper you love, that's the one for you. Today is the one that will give you the most detailed summary of your info. It will list the next 2 calendar appointments, two newest email message headers, and the last 2 missed calls. Icon is a cluttered mess, IMHO. But it does list ALL your apps, just like hitting the menu button on the other screens.

What about the "today plus" everyone is waiting and asking for? What's the "+" all about?

You get 5 zen icons on the bottom as well as the normal today screen.

I have another Today question

Can I edit the type of events that the Calendar section of the "Today" displays. It is not showing me my up coming all day events. It only shows timed events.

No and you're correct. You need to assign times to your all day events, like 12-12. I had to do the same thing.
