Please Login to Remove!

Why is every recipe in every cookbook and on every website made to feed 4+ people?!?

I just want to cook a meal for myself!!!

allrecipes.com has a servings calculator. You can increase/decrease at will

I eat a bunch. Usually about 3 times what I should be eating. My parents say that I am a "growing boy" and that I need it.

Ill be 20 in about 2 weeks. Lol

lol I have 2 daughters and a BF. He call me everyday to ask me what I'm going to cook so... 4 servings in my house are ok.

Whip the egg, and use a 1/4 of it.

1 Large egg beaten = 3¼ Tablespoons

So, 3/4 Tablespoon is just barely more than you would need.

I never know what I want to eat from day to day, so freezing is no good. I wish I lived in NY or Europe so I could just shop every day. :(

I'd love to invite people for dinner, but honestly, my apartment is not conducive to large crowds. :(

Three in our family...the wife cooks in bulk, then freezes the leftovers...and we save a bundle when I brownbag my lunch instead of eating out.

years of experience, coupled with the fact i LOVE to cook has taught me that you just estimate ingredients for a single person.

i don't eat much, and rarely look at a cookbook, so when i do, i just estimate the amounts given!

however, i live with my "growing" baby brother (he's 23) and he eats a hellava lot. so if i had to cook for 4, he'd finish 3/4.

First, look here:

Second, here are some desserts. We have some people in our family who can't eat sugar, so when we do desserts, we do them small so there are no leftovers to tempt folks.

Chocolate cake in a mug for one

1 large microwave-safe mug
4 Tablespoons cake flour
4 Tablespoons sugar
2 Tablespoons cocoa
3 Tablespoons semi-sweet chocolate chips
1 Egg
3 Tablespoons milk
3 Tablespoons oil

Mix flour, sugar, cocoa and chips in the mug.
Add egg and blend well.
Add milk and oil and blend well.
Put in microwave for 3 minutes on maximum power (assumes 1000 watt).
It may come up over the top of the mug; that's normal.
Let it sit in the microwave for about 6 minutes.
Dump out onto a plate and enjoy!
Serves 1.

1 regular soup bowl (use 2 bowls if yours are on the small side)
8 Oreos, divided
1 8oz pkg Philly cream cheese, at room temperature
1/3 of an 8oz pkg of Cool Whip
1/4 cup creamy peanut butter

Crush 6 of the Oreos, dump them into the bottom of the bowl.
Mix cream cheese, Cool Whip and peanut butter with a fork until blended; pour into bowl.
Crush the 2 remaining Oreos and sprinkle them over the top.
Refrigerate 2 hours or until set.
I usually use fat-free Philly and fat-free Cool Whip.
If peanut butter isn't your thing, you can substitute Eagle Brand condensed milk and top with cherry pie filling.
Serves 2 people or 1 teenage boy.

1 apple, sliced and cored (Granny Smith is best)
1 Heath or Skor bar, finely crushed
1 cup fat-free Cool Whip

Bake apple slices on a cookie sheet at 400 degrees for 20 minutes, turning once at about the 12 minute mark.
Mix crushed toffee pieces and Cool Whip.
Place still-warm apples in a bowl and top with Cool Whip mixture.
(This is also good without the toffee, in a pinch, but toffee's better.)
Serves 1.
