My T-Mobile 8700G and 8320 have always worked great anywhere in the Phoenix area. But when I was in Hartford, CT a few months ago, they could barely get a signal, and I experienced dropped calls for the first time in my life. My old Motorola E815 on Verizon worked flawlessly in both locations. Also, I don't know any of the technical details about EDGE vs EVDO vs 3G, but in my personal experience, my laptop tethered to the E815 on EVDO had a noticeably faster connection than when it's tethered to the T-Mobile phones now. So, I personally have had far better luck with Verizon. That being said, their prices are insanely high compared to T-Mobile's.
EDIT: realized you asked about EVDO vs 3G, not vs EDGE. I have no experience with 3G, so can't offer anything there.
