Regarding #1 - the BlackBerry already keeps a record of all placed and received calls, their start time and duration. That record may be forwarded as an email ... It may be possible to automate this process, but as a present day workaround your consultants can hit ALT, P within the Messages application to review the day's phone call logs.

Regarding #2 - you would probably have better luck with a 3rd party audio recorder that patches into the headset jack. Or better yet, design a Bluetooth device which operates over the Headset or Handsfree profile and contains a digital audio recorder.
