I just got a Verizon 8330. Literally this week. On the back at the bottom it says
"Qualcomm 3G CDMA" Can someone explain???

It's a 3G device.
EVDO (which your CDMA device supports) is a 3G wireless networking technology.

Ok, so how does one take advantage of a 3G network? I'm honestly not at all familiar with 3G and what it does. Until this week when my company switched carriers I was stuck in the BB dark ages with a 7100i.

There's nothing more to take advantage of. You're already using it.
If your BlackBerry says 1XEV near your signal meter, then you're on Verizon's EVDO network.

You should already notice that your data speeds are significantly faster than they were on your 7100i.
