Have to do that in 2 parts:
1. Create a new profile named something like 'server status' and set the Messages to have a specific tone/volume, etc.
2. Create an Exception Profile for the address the server status emails come from (add the server status email to your Address Book as a contact first). Set the 'From' field for the server status contact and the Use Profile to the profile name you created in #1.
