Default Override Address- What does it really do?

I am new to BES 3.6, but am learning quickly as I mess around with it (and read posts here!)-

Whenver I use the 'override address' function, what I think should happen does not. My assumption was that if I changed this, any e-mail sent from this user would appear to have come from whatever e-mail I set it as.

However, when I do this- nothing changes. I can send from my BB still, but it shows up as being from the default e-mail address- not the one I have changed it to.

This is installed on Server 2000 and is working with a 2000 Exchange Server
