Message Options - Email Settings.

If you change the Message Services address in one account under Message Options, it changes them for ALL email accounts. However, it doesn't change the email listed under Default Services - Messaging (CMIME) in the Options Advanced Menu. Does anyone know the difference between the two?

I placed a previously post asking where to find the default settings which was great but I'm still a bit confused about the message options under each email account.
