When I input something into the calendar it transfers some sort of data because I see in the top right the arrows moving for a second. I don't have it setup to sync wirelessly or anything so I'm wondering why its doing that everytime I input a new entry.

The device is always communicating with the network, if anything just to say "I'm here." Depending on what applications you have running that also use data, there will be additional communication periodically. I really think what you are seeing has nothing to do with your momentary interaction with the calendar application.
