I have read several places how to change the default email setting. I have 3 email addresses but when I go in to change it, it never does change....I "save" the change....and I have read that the only way to change the default is to go in and delete all accounts and set them up again. Any clues as to how to change the default without setting up the accounts again?

Options > Advanced > Default Services (or Messages on some lower OS releases). That will change your default email account.

Now, if you can be more specific about what you need, there migth be something additonal, such as why that email account is not always the default for certain contacts, or for emailing images from the camera application.

That is precisely where the setting is on my 8330m Curve with 4.5.0.138. You will note settings for both your default email AND your default calendar. Both can be changed here. Save on exit.

what about deleting the default email message that says "sent from my blackberry..."--is it possible to clear that out so an email appears the same as if it were sent from a computer?

You can delete that "sent from" message by logging into your BlackBerry account from the web and changing your signature file. This change cannot be accomplished on your handheld device or in BB Desktop Manager. It is done right on the BlackBerry server.
