Any third party software that can allow me to read Chinese e-mails?

You can try giving HH OS 3.7.3.20 a try? My understanding is that it offers Chinese character recognition, beyond that it's identical to 3.7.1.41

3.7.3.20 for 72XX

3.7.3.20 for 77XX

I am using this now for 7230, and found it cannot display most of the Chinese characters. So far, my best guess is it only supports UNICODE Chinese, and not other Chinese character. The Chinese inputting works perfectly.

Also, the downside is there is no simple switch between Chinese and English when you compose an message. You will have to go to Options -> Localization everytime to change the input locale. Or someone knows a quick switch? Please let me know. Thanks!

No, it won't work with a 7510, its intended for a hong kong carrier that uses gprs and as such there hasn't been any software releases for their other platforms.
