Does anyone know how to turn off data (email/browsing etc...) but still be able to send receive voice/SMS etc...?

Lol yes. And btw, you can force SMS to use the data network.

so, I have a newbie question. If I turn off data and try to use the wi-fi will it work without trying to use 3g data?

yes, once your Data is turned off, Blackberry Internet Service and/or Blackberry Enterprise Server (under Manage Connections>Services Status) will show the connection as WiFi instead of Mobile Network. Voice/SMS will still remain on Mobile Network. Hope this clarifies it.
