Got nice music on my Jav 8900 and decided to listen to some at the local coffee shop. But all the noise came out of the phone's speaker not the headphones (which were silent). Does the Jav need a special set of headphones?

The 8900 will recognize when earphones or RCA cable is inserted properly into the phone jack and will use the speakers until it does. Could the phones have not been plugged in quite properly? Is the phones jack a stereo jack (two black rings on the plug) rather than a stereo plus video jack (three black rings on the plug)?
The headphones are the two black rings on the plug kind and I have used them on my other Blackberry phone and iPod without any problem. I plug them properly to the best of my knowledge (I can't shove them any tighter).

Do you have another pair of headphones or earbuds you can try?
When you're in the media player you should actually see the little icon change in the bottom-right depending on what's plugged in.
If you're using Bluetooth stereo headphones you'll get the 'B' Bluetooth logo, if it's wired headphones you'll get a little headphone graphic, and if it's coming out of the handset you'll get a speaker icon.
This icon should change on the fly as you plug different stuff in.
