To clarify, there are four main frequency ranges for GSM/GPRS/EDGE which center approximately 850, 900, 1800 and 1900Mhz. (See Wikipedia for exact numbers). Basically, nearly all of the world's possible frequencies for EDGE is supported, so EDGE works if the network supports EDGE. (I'm excluding GSM 450Mhz, which is a very niche frequency)
HSDPA/UMTS have different frequencies, and it is in theory possible to have a multiband model that is compatible with both Rogers and T-Mobile. However, the Bold only supports only some of the frequencies (at this time).
So it's not a simple matter of "EDGE frequencies are the same for everyone" -- just the Bold happens to support pretty much all of the currently-used EDGE frequencies but only some of the currently-used HSDPA/UTMS frequencies are supported.
