Now that i can see HTML emails and email signatures display all nicely, I was wondering whether I can set my signature on the BES like it is within outlook?

I've had a look around and it still looks like it can only be set as plain text, is that right?

HTML is support in BES 4.1.5 and above.

Yep.Know that I can view them and it looks good, though I want to know if I can set a signature on the BES or on the device, so when I send an email from the device it will display like it does when I send from outlook?

I don't think you can send anything in HTML yet.
