I purchased a few Themes for my Blackberry Curve 8310 some years back and I have all those old "back-up files" still on my PC. So, I was wondering, is it possible to selectively restore just those items from the old "Curve 8310" backup files onto my new Torch?

Nope. Themes that are not designed for your device, will not work.
