force server type with bis account?

lets say i have an email server running ms exchange. pop, imap, owa, are all available. how would i force the bis setup to use imap for example? when you setup the account it initially only asks for your email address and from that it determines the server etc. but how do you know what protocol its using? even if you put a bad password to force the advanced screen it then only asks you for server name. how does bis determine what protocol to use when multiple are available?
