So how is it someone can send a message while in the US and it shows an origination IP for a RIM server in the UK?

Well...actually if you do a reverse search it comes back to a server in the UK, in London if I'm not mistaken.

Why would a message sent from my BB in the US route through and show an originating IP of a EU Blackberry server?

I am doing some research on Blackberry emails and I have found "PR_RIM_INTERNET_MESSAGE_ID" to be a very elusive topic. I am trying to find out what, if any, information can be discerned from this...
