i know the home screen shortcuts when you change "dial from home screen" to off...

m-messages
a-address book
k-screen lock
etc...

is there a way to change them around and/or add applications to the letters that arent being used?

nope

I use shortcutme. You van hit the space bar and then choose your letter. There are multiple programs that are available for this.
